As we all know, moon is the karaka of water in jyotish. 70% of earth is water and same is the case with our bodies. 70 % of our body comprises of water. And rest 30 % is what we eat. And basically, what we eat is also moon. Moon is the karaka of nurturing; it nurtures us like a mother. Moon also is our mind, as mentioned in the shloka below, our mind creates our body. मनः सृजति वै देहान् गुणानि कर्माणि चात्मनः। तन्मनः सृजते माया ततो जीवस्य संसृतिः॥ (मन ही शरीर, गुण, कर्म और माया का सृजन करता है, जिससे जीव का संसार में बंधन होता है।) Our body is made of what we eat, our food habits, in ayurveda, it is mentioned how our mind is going to be depends on our food habits. Ayurveda divides food in 3 guna, Sattva, Rajas and tamas. Now the same rule applies in jyotish, sattva grahs (Sun, Jupiter) are the benefics, rajas grahas (Moon, Venus, Mercury) are the ones which provide luxury and the last ones are tamas the malefics (Mars, Saturn, Rahu & Ketu). But moon specifically plays the most important role in our food habits, as moon sitting with any planet will provide us that kind of results.
